“Confit of Smoked Pork Belly with Asian Spiced Pork Tenderloin” prepared by chef Joseph Royer of The Coach House in Oklahoma City, OK, topped the 15th annual national Taste of Elegance contest held in early May at the Marriott Hotel, Des Moines, IA.

Fourteen chefs competed. Each contestant either won a state or regional contest with an original pork entrée that was judged for taste, appearance and originality.

The contest encourages chefs to use pork in creative, non-traditional ways.
